Memories are made around the dinner table
That’s an ages old sentiment that rings true for the majority of us, especially around this time of the year. As the holidays approach, we look forward to spending quality time with our friends and family, conversing around dinner tables filled with food, laughter and holiday cheer. Traditions large and small take place across days, even weeks for some, as we give thanks for the joy our loved ones bring to our lives.
It truly is the most wonderful time of the year. Pheasant hunting is in full swing; hunters are taking to the fields to carry on old, or begin new, traditions, and families are ready for a break from the hustle and bustle of daily life. Whatever your traditions are, as the holiday’s approach, we encourage you to continue the tradition around the dinner table, and feast on some of the spoils of your hunt with our delicious holiday pheasant recipes! We enjoy our pheasant with a side of brandy, but you do whatever works best for you.
Glazed Roast Pheasant
Be sure to brine the bird for at least 4 hours (or up to 8) before roasting this delicious wild caught delight. Use a ratio of 4 cups water to ¼ cup Kosher salt, whisked until dissolved. Place your bird in a plastic or ceramic container, add the water, cover and place in the fridge. When you’re ready to start making dinner, pull the bird out, pat dry with paper towels, and let it rest on the counter. Preheat your oven to 450 degrees. While that’s coming to temp, rub your bird down with the cayenne pepper and put the sprig of sage into the cavity.
